Parmi ces voix, celle de Wivine, cheffe et propri\u00e9taire du restaurant&nbsp;<em>La Paillote Africaine<\/em>&nbsp;\u00e0 Huy.<\/strong><\/p>\n\n\n\n<p class=\"has-drop-cap wp-block-paragraph\">Son histoire t\u00e9moigne des d\u00e9fis et de la passion n\u00e9cessaires pour faire vivre l\u2019afro-food en Belgique. Wivine a grandi \u00e0 Bumba, localit\u00e9 portuaire du nord de la R\u00e9publique d\u00e9mocratique du Congo. Sa premi\u00e8re approche de la cuisine s\u2019est faite dans cette r\u00e9gion, o\u00f9 son p\u00e8re tenait un restaurant. <em>\u00ab Il avait un restaurant, et il y avait des femmes qui pr\u00e9paraient pour ce restaurant-l\u00e0. Et moi, je regardais. C\u2019est l\u00e0 que tout a commenc\u00e9. \u00bb<\/em> Pourtant, faire de la cuisine son m\u00e9tier n\u2019\u00e9tait pas initialement dans ses plans. Au Congo, elle \u00e9tait infirmi\u00e8re.<\/p>\n\n\n\n<figure class=\"mzb-image mzb-image-ac48a8b0\"><img decoding=\"async\" class=\"wp-image-2440 hover-effect-static filter-none mask mask-none\" src=\"https:\/\/ecjo2.commu.isfsc.be\/wp-content\/uploads\/2025\/03\/IMG_1214-2-1.heic\" alt=\"\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est en arrivant en Belgique qu\u2019elle commence \u00e0 travailler dans un restaurant \u00e0 Huy. Petit probl\u00e8me : son patron ne poss\u00e8de pas l\u2019acc\u00e8s \u00e0 la profession, une obligation l\u00e9gale pour g\u00e9rer un \u00e9tablissement de restauration. Apr\u00e8s un contr\u00f4le, l\u2019activit\u00e9 du restaurant est restreinte, ce qui pousse Wivine \u00e0 envisager de faire des \u00e9tudes en h\u00f4tellerie. Initialement, son objectif est d\u2019obtenir l\u2019acc\u00e8s \u00e0 la profession pour aider son patron, mais celui-ci lui propose finalement de reprendre le restaurant. Apr\u00e8s r\u00e9flexion, elle d\u00e9cide d\u2019accepter, mais doit d\u2019abord compl\u00e9ter une formation d\u2019un an en gestion.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une fois dipl\u00f4m\u00e9e, la proposition de son ex-patron a malheureusement expir\u00e9. Gr\u00e2ce \u00e0 son r\u00e9seau, elle d\u00e9couvre un ancien karaok\u00e9 en p\u00e9riph\u00e9rie de la ville, qu\u2019elle transforme progressivement en son restaurant,&nbsp;<em>La Paillote Africaine<\/em>. Malgr\u00e9 des moyens limit\u00e9s, elle r\u00e9ussit \u00e0 d\u00e9velopper son \u00e9tablissement, \u00e9tape par \u00e9tape.<\/p>\n\n\n\n<div class=\"mzb-heading mzb-heading-99449aa3 mzb-heading-layout-1 mzb-heading-layout-1-style-1\"><div class=\"mzb-heading-inner\"><h2 class=\"mzb-heading-text\"><strong>Les d\u00e9fis du quotidien<\/strong><\/h2><\/div><div class=\"sub-heading\"><p><\/p><\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Depuis 2004,&nbsp;<em>La Paillote Africaine<\/em>&nbsp;est une adresse incontournable pour les amateurs de cuisine africaine. Wivine en est aux commandes et g\u00e8re seule le travail en cuisine.<br><em>\u00ab Travailler comme ind\u00e9pendante en tant que cuisini\u00e8re, ce n\u2019est pas facile du tout,<\/em> explique-t-elle. <em>Puisque ma cuisine est ouverte, on voit quand je travaille. Souvent, les gens sont \u00e9tonn\u00e9s de voir que tout ce qu\u2019ils mangent, je suis seule \u00e0 le pr\u00e9parer. \u00bb<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D\u2019autant plus que la cuisine africaine demande du temps. \u00ab Si des clients commandent un steak-frites, c\u2019est vite fait, c\u2019est servi. La majorit\u00e9 des plats africains sont des plats mijot\u00e9s. \u00c7a prend des heures et des heures. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/ecjo2.commu.isfsc.be\/wp-content\/uploads\/2025\/03\/a07b04ac-8832-4b87-bc98-bdb91d3a5605-2.jpg\" alt=\"\" class=\"wp-image-2670\" \/><figcaption class=\"wp-element-caption\">Cela n\u00e9cessite une bonne organisation. Les week-ends, elle opte souvent pour des \u00ab buffets d\u00e9couverte \u00bb afin de faciliter le service et permettre \u00e0 chacun de go\u00fbter \u00e0 plusieurs sp\u00e9cialit\u00e9s. Photo par Naya Sanguinettio<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Malgr\u00e9 les difficult\u00e9s, les charges et les impr\u00e9vus \u2013 comme le Covid \u2013 son amour pour la cuisine reste intact. <em>\u00ab \u00c7a fait 21 ans que je suis l\u00e0, avec des hauts et des bas. Mais c\u2019est parce que j\u2019aime mon m\u00e9tier. J\u2019aime ce que je fais. La cuisine, c\u2019est ma passion. Je ne saurais pas faire autre chose, c\u2019est pour \u00e7a que je me bats. \u00bb<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gr\u00e2ce \u00e0 sa d\u00e9termination,&nbsp;<em>La Paillote Africaine<\/em>&nbsp;continue d\u2019accueillir ses clients dans une ambiance chaleureuse.<\/p>\n\n\n\n<div class=\"mzb-heading mzb-heading-6e477987 mzb-heading-layout-1 mzb-heading-layout-1-style-1\"><div class=\"mzb-heading-inner\"><h2 class=\"mzb-heading-text\"><strong>Une notori\u00e9t\u00e9 grandissante<\/strong><\/h2><\/div><div class=\"sub-heading\"><p><\/p><\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Si&nbsp;<em>La Paillote Africaine<\/em>&nbsp;est devenue une adresse incontournable, c\u2019est avant tout gr\u00e2ce au bouche-\u00e0-oreille. Depuis plus de 20 ans, Wivine a su fid\u00e9liser une client\u00e8le qui n\u2019h\u00e9site pas \u00e0 recommander son \u00e9tablissement. \u00ab<em> Beaucoup de clients viennent parce qu\u2019un proche leur a parl\u00e9 de moi. C\u2019est ce qui me motive \u00e0 continuer \u00bb<\/em>, confie-t-elle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cette reconnaissance s\u2019est aussi traduite par une pr\u00e9sence remarqu\u00e9e dans le guide&nbsp;<em>Petit Fut\u00e9<\/em>, pour la cinqui\u00e8me fois cons\u00e9cutive. <em>\u00ab La premi\u00e8re fois, en 2019, je ne savais m\u00eame pas ce que c\u2019\u00e9tait ! C\u2019est un client qui m\u2019a appris que mon restaurant y figurait \u00bb<\/em>, raconte-t-elle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Derni\u00e8rement, c\u2019est \u00e0 travers le documentaire&nbsp;<em>Roots and Plates: A Story Of Afro Food In Belgium<\/em>&nbsp;que son restaurant a \u00e9t\u00e9 mis en avant. <em>\u00ab Au d\u00e9but, j\u2019\u00e9tais h\u00e9sitante, mais j\u2019ai trouv\u00e9 que c\u2019\u00e9tait une belle opportunit\u00e9 de faire conna\u00eetre mon restaurant et la richesse de notre cuisine. \u00bb<\/em><\/p>\n\n\n\n<div class=\"mzb-heading mzb-heading-5bf5cc86 mzb-heading-layout-1 mzb-heading-layout-1-style-1\"><div class=\"mzb-heading-inner\"><h2 class=\"mzb-heading-text\"><strong>Une transmission en pr\u00e9paration<\/strong><\/h2><\/div><div class=\"sub-heading\"><p><\/p><\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Malgr\u00e9 sa passion pour son m\u00e9tier, Wivine se rapproche de l\u2019\u00e2ge de la retraite et pense donc \u00e0 l\u2019avenir de son restaurant. Ses filles ne souhaitant pas reprendre l\u2019affaire, elle cherche activement quelqu\u2019un \u00e0 former pour assurer la continuit\u00e9 de&nbsp;<em>La Paillote Africaine<\/em>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est ainsi qu\u2019une jeune femme passionn\u00e9e de restauration s\u2019est propos\u00e9e. <em>\u00ab Elle m\u2019a confi\u00e9 qu\u2019elle r\u00eavait de reprendre&nbsp;La Paillote&nbsp;un jour. Elle suit sa formation, et moi, je suis l\u00e0 pour l\u2019accompagner \u00bb<\/em>, explique Wivine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019objectif est de transmettre non seulement le restaurant, mais aussi l\u2019\u00e2me de&nbsp;<em>La Paillote Africaine<\/em>. \u00ab<em> Mes clients sont habitu\u00e9s \u00e0 ma cuisine, donc il faut qu\u2019elle garde l\u2019essence de ce que j\u2019ai cr\u00e9\u00e9, tout en y apportant sa touche personnelle \u00bb<\/em>, ajoute-t-elle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si le passage de relais n\u2019est pas encore act\u00e9, la transition se pr\u00e9pare doucement, sous l\u2019\u0153il attentif de Wivine, qui restera disponible pour guider celle qui prendra la rel\u00e8ve.<\/p>\n\n\n\n<figure class=\"mzb-image
