Il faut \u00eatre pr\u00e9sent le week-end, parfois le dimanche. Ce sont des horaires lourds \u00bb, explique Jean-Fran\u00e7ois Destailleur.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c0 ces contraintes s\u2019ajoute une question salariale. Les r\u00e9mun\u00e9rations restent peu attractives au regard de l\u2019intensit\u00e9 du travail. \u00ab Beaucoup estiment que l\u2019effort demand\u00e9 n\u2019est pas suffisamment compens\u00e9 \u00bb, observe-t-il.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le responsable pointe aussi une \u00e9volution soci\u00e9tale. \u00ab Aujourd\u2019hui, certains consid\u00e8rent qu\u2019il est plus simple de sortir du march\u00e9 du travail que d\u2019accepter un m\u00e9tier exigeant. \u00bb Ch\u00f4mage, arr\u00eats maladie ou reconversions \u00e9loignent une partie des candidats potentiels.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mais la difficult\u00e9 est encore plus marqu\u00e9e pour les m\u00e9tiers sp\u00e9cialis\u00e9s. Bouchers, boulangers, poissonniers : ces professions manuelles peinent \u00e0 recruter. \u00ab Pendant des ann\u00e9es, ces m\u00e9tiers ont \u00e9t\u00e9 peu valoris\u00e9s \u00e0 l\u2019\u00e9cole. Les jeunes s\u2019y orientent moins. \u00bb R\u00e9sultat : une p\u00e9nurie durable de qualifications cl\u00e9s.<\/p>\n<\/div><\/div>\n<\/div><\/div><\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"mzb-section mzb-section-5f2bd32b\"><div class=\"mzb-container\"><div class=\"mzb-section-inner is-horizontal justify-center align-center\">\n<div class=\"mzb-column mzb-column-b29b49af\"><div class=\"mzb-column-inner\">\n<p class=\"wp-block-paragraph\"><strong>Des rayons moins pr\u00e9par\u00e9s, un accueil fragilis\u00e9. <\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le sous-effectif a des cons\u00e9quences directes. \u00ab Quand il manque du personnel, on a moins de temps pour pr\u00e9parer les rayons et accueillir les clients correctement \u00bb, reconna\u00eet le patron. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La pr\u00e9paration des produits prend du retard. Certains rayons sont moins fournis en d\u00e9but de journ\u00e9e. La disponibilit\u00e9 en magasin s\u2019en ressent. Le conseil personnalis\u00e9, autrefois central, devient plus difficile \u00e0 assurer. \u00ab Le service repose sur la pr\u00e9sence humaine. Si les \u00e9quipes sont sous tension, cela impacte forc\u00e9ment l\u2019exp\u00e9rience client. \u00bb<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019ouverture des caisses peut \u00e9galement \u00eatre retard\u00e9e. Les files s\u2019allongent aux heures de pointe. Chaque absence p\u00e8se sur l\u2019organisation globale.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"mzb-column mzb-column-4aa29f9b\"><div class=\"mzb-column-inner\">\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Simplifier pour continuer \u00e0 servir.<\/strong> <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Face \u00e0 cette r\u00e9alit\u00e9, l\u2019enseigne adapte son fonctionnement. Objectif : r\u00e9duire la d\u00e9pendance \u00e0 des comp\u00e9tences devenues rares. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En boucherie, la viande arrive d\u00e9sormais pr\u00e9d\u00e9coup\u00e9e depuis l\u2019abattoir. \u00ab On re\u00e7oit des produits en \u201cpad, en poche\u201d. La d\u00e9coupe est faite en amont. \u00bb Moins de travail technique en magasin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">M\u00eame logique au rayon fromagerie et charcuterie. Davantage de produits pr\u00e9d\u00e9coup\u00e9s, comme la mimolette. Le frais emball\u00e9 se d\u00e9veloppe fortement. Certaines pr\u00e9parations sont r\u00e9alis\u00e9es en usine. D\u2019autres sur place, par du personnel non sp\u00e9cialis\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En boulangerie, les viennoiseries arrivent crues et surgel\u00e9es. Croissants et pains au chocolat sont livr\u00e9s en cartons, puis simplement cuits en magasin. \u00ab Cela permet de maintenir l\u2019offre sans d\u00e9pendre enti\u00e8rement d\u2019un boulanger qualifi\u00e9. \u00bb<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces ajustements pr\u00e9servent la disponibilit\u00e9 des produits. Les caisses en libre-service absorbent d\u00e9j\u00e0 une partie du flux. Mais les projets vont plus loin. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00ab On \u00e9voque des robots de mise en rayon \u00bb, indique Jean-Fran\u00e7ois Destailleur. \u00c0 plus long terme, la disparition des h\u00f4tesses de caisse n\u2019est plus exclue. Le client pourrait passer son caddie dans un tunnel de comptage automatique. Le ticket serait envoy\u00e9 directement sur smartphone.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces innovations restent encore en marge. Mais elles pourraient s\u2019imposer rapidement si la p\u00e9nurie persiste. <\/p>\n<\/div><\/div>\n<\/div><\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pr\u00e9server l\u2019exp\u00e9rience malgr\u00e9 tout<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le constat est clair : le manque de personnel qualifi\u00e9 affecte la pr\u00e9paration des rayons et la qualit\u00e9 d\u2019accueil. La grande distribution s\u2019adapte en simplifiant ses t\u00e2ches et en acc\u00e9l\u00e9rant l\u2019automatisation.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reste une question centrale : jusqu\u2019o\u00f9 ces transformations permettront- elles de maintenir un service client de qualit\u00e9 ?
